Can you give me a good catfish recipe?

There are so many catfish recipes, but my favorite is beer battered catfish and smoked catfish dip. For the catfish dip, take about one pound of smoked catfish and break into little pieces. Take 8 ounces of cream cheese, add 2 tablespoons butter, 1-tablespoon onion, 1-tablespoon white wine, 1-tablespoon lemon juice, 1 tablespoons hot pepper sauce, 1-tablespoon dill, and mix together. Add the catfish and stir until thoroughly mixed. This is served with crackers. I use wheat crackers. The beer batter catfish is very easy to make and taste delicious. I use a deep fryer to make my beer battered catfish. Heat the deep fryer to 350 degrees. Mix 2 cups of flour, 1 cup of beer, dash of garlic powder, pepper and salt to your taste. This is for four fillets. Dip the filets in flour and then in the batter and then into the deep fryer until they are golden brown. These recipes are the easiest to make and when I have a few friends over, I make the batter fish for the dinner and serve the dip after dinner for a snack. I do have other recipes that take a little more time to make, but these are the best. The catfish is a great tasting fish and I try not to mask the favor with to many other favors. It just seems to take away from the natural catfish favor. You can try other recipes, but they may take away from the favor of the fish.
