Do you have a good baked catfish recipe?

The recipe I use for baked catfish is easy and quick. This is a good dish to make if you are short for time and need to get other things done while waiting for dinner. You will need: One pound of catfish 1/4 cup of onions Pinch of oregano 1/8 teaspoon dried thyme 1/4 teaspoon garlic salt 1/8 teaspoon pepper 1/4 teaspoon salt 2 tablespoons of flour 1 cup of milk 1 tablespoon of butter Prepare the bake catfish: Preheat the oven to 350 degrees. Place the catfish in a casserole dish. Add the butter. Rub butter over every piece if possible. Mix the flour and milk. Cook over a medium heat until the mixture makes a thick sauce. Stir constantly until it thickens. After the mixture starts to bubble, cook for one more minute and remove from heat. Add the onion. Oregano, thyme, pepper, salt and garlic salt to the thicken mixture. Pour this mixture over the catfish. Sprinkle some paprika over the top of the mixture and place in the over uncovered for 25 minutes. This recipe makes about four servings for the average eater. Double the recipe if you are a big eater of catfish. I have always liked catfish, so when I make this recipe and there are more than two people, I double it so I will have enough for myself and everyone else. I figure 3/4 pound of catfish for me and 1/4 pound for the other person. You can use this to figure out hw much to make as well.

You nailed this recipe, it is fantastic. I would use more catfish than suggested, 1/2 lb for each person, or more depending on how much you like fish. There were no leftovers; this was a nice change of pace to the fried catfish I usually make, and a good way to use some that were a little large for the frying pan.
