		<description>You nailed this recipe, it is fantastic.  I would use more catfish than suggested, 1/2 lb for each person, or more depending on how much you like fish.  There were no leftovers; this was a nice change of pace to the fried catfish I usually make, and a good way to use some that were a little large for the frying pan.</description>
