Begin with a coat of dark brown paint and steel wool the dried model to highlight it, follow with a sealant coat. Once that dries, give a coat of a lighter brown, or a yellowish brown, depending on the natural color of your fish to begin with. Steel wool again to create a mottled look when your steel wool reveals a little of the base coat. Just use light coats and work with the steel wool to create realistic patterns.
