Then, cut off the tail and discard it. Make a shallow cut on the belly of the fish from one end to just below the head of the fish. Using your hands, scoop out the entrails of the fish and discard. Cut off the head of the fish and discard it. If you clean your fish where you catch them, just throw the remains into the water and the other catfish will dispose of them for you.
