What is a good recipe for catfish stew?

I have a great catfish stew that I use when my mom and dad come to visit. The catfish stew is very tasty. It does take five pounds of catfish to make this stew recipe. The gravy is made at the end of the cooking time. This recipe was given to me a long time ago and I thought the eggs would just be awful, but it turned out very good. You can always omit the eggs if you want. The recipe does taste the same basically, but once you have it with the eggs, you will understand why. You will need: 5 pounds of catfish 6 slices of bacon, diced 3 pounds of potatoes, diced 2 pounds of onions, diced 5 cups of water 6 hardboiled eggs, diced One 6-ounce can of evaporated milk One 4-ounce can of drained pimento, diced Pepper and salt to taste Corn meal Prepare the stew: In cornmeal, milk and the seasonings, fry the catfish until flakey and set aside. Then fry the bacon and set aside. In the bacon drippings, fry the onion and potatoes. In a Dutch oven, add the fish and four cups of water. Then add the pimento, eggs, onion, potatoes and bacon. Cook on low for about an hour and a half and add more water if needed. Then add milk while stirring. Add the salt and pepper as needed. Stir constantly to make the gravy. Serve as soon as the gravy becomes thick. This will be very quick.
