Perhaps my favorite is chicken liver, or chicken hearts (if you can get
them) fished without a bobber, on the bottom of the water is a sure bet
when it comes to tempting a catfish. About the only problem with using
chicken liver for catfish bait is keeping it on the hook. You can use a
piece of pantyhose to wrap it in before hooking it. Using a treble hook
helps, or you can put the liver on your hook, wrap it with sewing
thread to tie it onto the hook, or cover your liver in garlic salt, and
lay it in the sun and allow it to dry out for a day or two. Believe it
or not, this will actually enhance the appeal of the liver to the
catfish.
